Avocado powder can be a great item to add to your breakfast. It's a good source of healthy fats, along with folate, vitamin K, and various minerals. The obvious ways to use it are to put it on toast or add it to a smoothie. But those are not your only options! Here are two more unique ways to incorporate avocado powder into your breakfast.

Avocado Oatmeal

People often think of oatmeal as a sweet dish, but you can make a savory version with avocado powder and some carefully selected spices. Here's a basic recipe to follow, which makes one serving.

Ingredients:

  • 1/3 cup quick cooking oats
  • 2/3 cup water
  • 1 tablespoon avocado powder
  • a pinch of salt
  • 1/4 teaspoon onion powder
  • a pinch of cayenne pepper
  • pan-fried or grilled tomatoes, optional
  • salt and pepper, to taste

Combine the oats and water in a microwave-safe bowl. Add the salt, onion powder, and cayenne pepper. Stir well. Cook for 1 minute on high. Remove from the microwave, and stir in the avocado powder. Cook for an additional minute on high. Remove from the microwave, stir, and sprinkle with salt and pepper. Top with the tomatoes, and enjoy.

Avocado Muffins

Can you imagine the rich goodness of avocado in a muffin? It's pretty incredible. Here's a simple recipe for avocado muffins, made with avocado powder. 

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup avocado powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup brown sugar
  • 1/4 cup butter, melted

Mix together the flour, salt, baking powder, and avocado powder. Set aside. 

In a separate bowl, mix together the egg, milk, melted butter, and sugar. Stir well.

Create a well in the middle of the dry ingredients, and pour in the wet ingredients. Slowly fold the two mixtures together, being careful not to over mix. Stop mixing as soon as the two mixtures are fully incorporated. 

Scoop the mixture into 12 paper-lined muffin tins. Bake at 375 degrees F for 20-22 minutes, or until the muffins are slightly brown on top and firm to the touch. Let the muffins cool for 10 minutes before removing them from the pan. They're delicious spread with butter, or even dipped into a little salsa for a savory snack.
